While tempted to wait until the next rain to sample the finished Sweet Potato Rice Beer, impatience got the best of us.
Given the moderate late-winter temperatures (mid- to upper-60s), fermentation lasted seven days. After straining, we ended up with around 1.6 gallons of rice beer. It pours an opaque pale orange and tastes assertively sour, with a lactic acidity balanced by an underlying sweet earthiness and clean finish.
A drink to enjoy with friends, regardless of weather.
